A month ago the Spring held so much promise, yet this week it appears we’re back in Winter.

To help you through the day, with a little added sweetness and plenty of oats for your energy levels, is a quick recipe for delicious flapjacks.

Easy to make and a great reward for getting through all that work, here’s the recipe ; 

1.  Preheat the oven to 160C, 325F, Gas 3.

You’ll need 225g (8oz) demerara sugar, 225g (8oz) butter/marg, 2 tablespoons golden syrup, and 275g (10oz) rolled oats.

30cm x 23cm (12″ x 9″) lightly greased roasting tin.

2. Put the sugar, butter and syrup into a saucepan and melt over a low heat.

 

3.  Stir in the oats until well mixed, then tip into the roasting tin and level out, pressing flat with the back of a spoon.

 

4.  Bake in the preheated oven for 35 mins, until pale golden brown. Be careful not to over cook as they will become burnt and very hard.

5.  Remove from the oven and allow to cool for 10 mins before marking into 24 squares.

Leave to cool completely in the tin, then get the kettle on !
